Once upon a time I was gifted some vintage Westinghouse Micarta from another maker, I put green liners on it. Everyone liked the micarta, nobody liked the green liners. Too bad, I thought it was fun. Rumor has it, it’s still for sale through a retailer (Literally, if you are interested in an 8” gyuto with green g10 liners and vintage Westinghouse Micarta, email me and I will send you a link). ANYWAY, this is not that knife and not that Micarta, but I was so happy with the look of a natural canvas Micarta that I got more and made this just for you. (Yes, you. Seriously, because the next one I’m making for me, but I’ll let you have first dibs because I’m a nice guy like that).
If you’re looking for a slightly smaller gyuto, are tight on cutting board space, or just like 6.25” knives, this is a fantastic option. This mini gyuto feels fantastic in the hand in a number of grips, it’s got that good good hand sanded finish and the luxuriously comfortable rounded and polished spine and choil I put on all of these lil mamma jammas for you fine folks, because just because you have that callus from all those sharp spine knives doesn’t mean you need to use it.
This knife is meant for cutting vegetables, fruits, and boneless meats/proteins. This blade edge should not come into contact with bone.
